Razza a la mele e cipolla rossa (Rita Denza, Restaurant Gallura at Olbia)

Serves 4

1kg skate wings

2 spoons olive oil

1/4 l cider vinegar

3 apples, sliced

1/2 red onion, sliced

4 snips Pepperoni

1 teaspoon Coriander, Anise, Juniper, black Pepper

5 pieces Clove, 3 pieces Laurel sliced,

Seasalt

1 spoon brown sugar

1 small glass Anisette

Cornflour

Fishfond



Sweat onions in oil, add apples, all spices, cider vinegar and brown sugar, thicken with corn-flour and simmer for 10 minutes, add fish-fond, if necessary to get a creamy consistency. Let cool down.

Cook the skate for 10 minutes with laurel and salt, skin and cut into 12 pieces. Let cool down.

Pour the lukewarm sauce over the skate and serve.
