Couillotes de mouton (Joseph at Lou Balico, Nizza)

Serves 4

600 gr. sheeps testicles

Eggyolk Flour

Breadcrumbs

Butter

Sunflower oil

Pepper

Salt


Wash testicles, then clean and cut into thin slices.
Dry and roll in flour, then in eggyolk and breadcrumbs.
Fry in a mixture of butter and sunflower oil for three minutes on each side until golden brown.
Serve with Ratatouille
